Try This Delicious Grilled Watermelon With Chamomile-Cocoa Salt

Using a ripe watermelon, anyone can follow this easy and innovative recipe. It will allow you to prepare a grilled snack using just watermelon wedges that will take on the smoky flavor of the grill.

To make grilled watermelon, you need to use a blend of spices, benne seeds, fennel, cocoa, and chamomile, and the grill itself will add to its taste. The benne seeds will give a robust and lightly bitter flavor that sesame seeds just cannot bring to the table, but you can use either.
If you like the results, you can even prepare some more of the chamomile mixture to have stored for future use. If you put it in an airtight container, it will last for about a week at room temperature.
How to Make It
Ingredients:
- 8 watermelon wedges
- 2 teaspoons of benne or sesame seeds
- 1 teaspoon of fennel seeds
- ½ teaspoon of unsweetened cocoa
- 2 teaspoons of dried chamomile blossoms
- ½ teaspoon of flaky sea salt
- 2 tablespoons of grapeseed oil
Instructions:
1. First, grind the benne seeds, chamomile blossoms, cocoa, and fennel seeds with a spice grinder until everything is broken up evenly. Set aside.
2. Now, get to grilling the watermelon. First, you have to preheat a gas or charcoal grill to 450°F or 500°F.
3. One of the sides of the watermelon wedges should be brushed evenly with oil, and place this oil side down on the grill. Use 2 teaspoons of the chamomile mixture to sprinkle the tops of the wedges evenly.
4. Grill the wedges without touching them for about two to three minutes. By then, grill marks should appear on the bottom, and this means you can remove the watermelon wedges from the grill.
5. Arrange the pieces on a large plate with the charred side up. Sprinkle them evenly with flaky sea salt and add the remaining chamomile mixture.
